Ingredients
1 cup of rice (white or brown)
1 can of black beans (drained and rinsed)
1 cup salsa (any kind)
1 cup shredded cheese (optional but tasty)
1 teaspoon taco seasoning or cumin/chili powder
Instructions
Cook rice according to package directions.
In a skillet or pot, combine beans + salsa + seasoning.
Heat for 5–7 minutes until warm.
Stir in cooked rice.
Top with cheese and let it melt before serving.
