Cozy February Soup: Recipes Lentil & Vegetable Soup

Ingredients

  • 1 tablespoon oil (olive or vegetable)

  • 1 small onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks (optional), chopped

  • 2 cloves garlic (or 1 teaspoon garlic powder)

  • 1 cup dried lentils (brown or green), rinsed

  • 1 can diced tomatoes (14–15 oz)

  • 6 cups of broth or water + bouillon

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 1 teaspoon cumin (optional for flavor)

  • 1 teaspoon Italian seasoning or dried herbs

  • 2 cups spinach or frozen greens (optional)


Instructions

  1. Sauté vegetables: In a large pot, heat oil and cook onion, carrots, and celery for 5 minutes.

  2. Add garlic and seasoning: Stir in garlic, salt, pepper, and herbs.

  3. Add lentils and liquid: Pour in lentils, diced tomatoes, and broth/water.

  4. Simmer: Bring to a boil, then reduce the heat and simmer for 25–30 minutes until the lentils are tender.

  5. Add greens (optional): Stir in spinach or frozen greens for the last 5 minutes.

  6. Serve: Enjoy with bread, crackers, or rice.
