Ingredients
1 tablespoon oil (olive or vegetable)
1 small onion, chopped
2 carrots, chopped
2 celery stalks (optional), chopped
2 cloves garlic (or 1 teaspoon garlic powder)
1 cup dried lentils (brown or green), rinsed
1 can diced tomatoes (14–15 oz)
6 cups of broth or water + bouillon
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
1 teaspoon cumin (optional for flavor)
1 teaspoon Italian seasoning or dried herbs
2 cups spinach or frozen greens (optional)
Instructions
Sauté vegetables: In a large pot, heat oil and cook onion, carrots, and celery for 5 minutes.
Add garlic and seasoning: Stir in garlic, salt, pepper, and herbs.
Add lentils and liquid: Pour in lentils, diced tomatoes, and broth/water.
Simmer: Bring to a boil, then reduce the heat and simmer for 25–30 minutes until the lentils are tender.
Add greens (optional): Stir in spinach or frozen greens for the last 5 minutes.
Serve: Enjoy with bread, crackers, or rice.
